Vegetable Stew
Instructions
  1. Heat vegetable stock in a non-stick wok. Similarly cube carrot and add to the wok. Cover and cook.
  2. Cube yellow zucchini. Tie up cloves, cumin seeds and black peppercorns in a piece of muslin cloth, crush slightly and add to the wok.
  3. Cube onion. Add cauliflower, onion, yellow zucchini and green zucchini to the wok and mix. Add salt and freshly crushed black peppercorns and mix. Cover and cook.
  4. Add garlic cloves and celery. Mix whole wheat flour with ¼ cup water till smooth and add to the vegetables.
  5. Add green peas and mix. Cover and cook till the vegetables are soft. Remove the spice potli. Add buttermilk and mix. Tear spinach leaves and add to the wok and mix well.
  6. Transfer into a serving bowl and serve hot.

karela (bitter gourd) soup
Instructions
  1. Saute the karela, onion, garlic and curry leaves in a large pot over medium-high heat until the veggies turn translucent.
  2. Add the green chilies and continue to saute for 10 minutes.
  3. Now add all of your dry spices. Remove the curry leaves and discard.
  4. Add crushed tomatoes. Add the water/vegetable stock.
  5. Turn up the heat to bring the mixture to a boil and then reduce the heat to medium and let the dish simmer for 30 minutes.
  6. Serve hot.
Recipe Notes

One can add 1 tsp Apple cider vinegar and garnish with coriander leaves.

  1. Cook brown rice with salt and one cup of water till three-fourth done. Drain and keep aside.
  2. Pressure-cook red kidney beans with onion and garlic till soft.
  3. Heat oil in the stockpot over medium heat and saute celery and onion for five minutes.
  4. Add the broccoli, carrot and paneer and cover.

  5. Cook for five minutes, stir occasionally, until everything is tender.
  6. Add the partially cooked brown rice and the kidney beans to the stockpot and add 4-5 cups water to it and cook for 5 minutes.
  7. Add white pepper powder, salt and simmer, uncovered, for fifteen minutes and garnish it with coriander leaves and serve hot.

INGREDIENTS

  • 1-2 karela, chopped
  • 4 large crushed tomatoes
  • 2 garlic cloves, diced
  • 2 onions-diced
  • 4 tbsp curry powder
  • 1 tbsp turmeric
  • 2 tsp dried Fenugreek
  • 3 dried curry leaves
  • 2 tbsp ginger- minced
  • 2 green chillies-diced
  • 2 tbsp sugar
  • vegetable oil, salt, pepper to taste
